EPS secreted by bacteria can protect the surrounding environment and confer advantages to embedded sessile bacterial communities that some planktonic bacteria do not. By removing the EPS matrix, bacterial communities without EPS protection are reduced due to the reduction in fluid frictional resistance. EPS-degrading enzymes can break down the EPS matrix, thereby reducing cell-to-cell and cell-to-surface binding during attachment, removing biofilm colonies, and increasing the susceptibility of microbial cells to antibiotics.
